Peas, Parsley and Feta Cheese



Looks yummy, right? Well, let me tell you, it was! And so easy to make, too. Here, I'll tell you.

So today I was hungry but noting in the fridge or pantry was looking too appetizing. Then I spied a bag of frozen peas in the freezer. Who doesn't love peas?

I put them in some water on the stove and while I was waiting for them to boil I decided to dress them up a little. Back to the frdige, where I found some feta cheese. We ALWAYS hae feta on hand. My in-laws get us huge bricks of it at Costco. God bless 'em.

My love affair with feta started when I used to pick up a Classic Greek Pita  from Wendy's on my way to work at a dry cleaners every day after class during my junior and senior years of high school. Oh, how I wish they'd bring that pita back! Feta was on that pita and I'd also ask for a cup of it on the side. Yes, a child's sized cup of feta cheese. I'm not ashamed. That stuff is good!

So, back to the peas. I threw on about 2 or 3 ounces of cheese and then some chopped up parsley. Parsley! It's so much more than a green leaf to make your plate look pretty! Drizzled some olive oil and balsamic vinegar on top and I had lunch.

Also, I'm kind of embarrassed that you now know about my cup of feta cheese habit. So now I need some dirt on you. Give me something good. Come on, it's only fair!
